Paleo Haddock Chowder and Tzatziki Pizza

Kay so yes…we are foodies…we love planning it, shopping for it, prepping it, cooking it and eating it!!! We love the hunt for new ingredients and hard to find stuff….and we LOVE trying new recipes!!!

Here are two recently made ones that we LOVE!!!!

Tzatziki Pizza!!

4 – Whole WheatPitas – we use Mother Nature ones from Costco which actually come from St. John NB 🙂

 

Tzatziki Sauce – make sure its the greek yogurt kind – NOT Sour Cream – we use the kind from Costco

Shredded cooked chicken – we used Jolly Farmer organic free range chicken that we got from Real Food Connections – two breasts

A jar of artichoke hearts soaked in water

Sun-dried tomatoes – 1/2 cup – we got ours from Real Food Connections

Olives – 1/2 cup sliced – we got them from the

Superstore olive bar 🙂 love that olive bar

Shredded Feta – or crumbled depending on the kind of feta you use. We got a Tomato Basil Feta made in NB from Real Food Connections – totally yummy!!! (1 cup)

Assemble – bake at 350F for 10-12 minutes and eat!

Fixers – 1 pizza is 1 red, 1/2 green, 1 yellow and 1 blue

Paleo Haddock Chowder

(gluten and dairy free)

3 pounds of Haddock – chopped into cubes

 

2 cartons of chicken stock – I usually use my own but ran out – we get the organic stock from Costco

2 cans of coconut milk

2 cups of carrots – honestly I didn’t measure – I put a few handfuls in the food chopper and added them.

2 cups of potatoes – ditto on the potatoes

1 onion – chopped

2 garlic cloves – minced

2 ribs of celery – chopped

dulce for seasoning (i used this instead of salt –

but you can use sea salt 🙂

red chili pepper flakes – 1/2 TBSP

Put’er all in a crock pot on low for 9-10 hours 🙂 Num Num Num

Fixers – 2 yellow, 1/2 green and 1 red for 2 cups 🙂

Transformations and Salads 😜

our journey has been amazing so far! Mike and I have worked very hard to organize our life’s so that we can both workout, both get our meals planned and prepped, both get all our water in ALL that AND spend quality time with our kids and with each other while juggling our careers, my masters classes, Mikes role as president of a non-profit gymnastics club, my gigs and private teaching And that’s not even mentioning our children’s busy schedules with hockey, dance and cheerleading. IT IS NOT EASY and we are VERY scheduled!!! Sometimes by 9pm we are fighting to stay awake to spend time together… And with a 5:30 wake up…so we can workout and walk the dog…and get the kids organized and get ourselves out the door by 7:15… Bed is the only thing we want sometimes! But the hard work is paying off and we are seeing results and we love it! Summer is here and it’s time for some us time!! Sleep in, sit on the deck, tend our new garden, go to the beach, spend time with friends, go on day trips…. Ahhhhh can’t wait! But look at us so far! We will not lose sight of what our plans are! No way!!!!

So with summer, here is an easy salad to try.

Cherry, Asparagus and Corn Salad with a honey ginger balsamic dressing

  

1 bunch of asparagus 

3/4 cup of cherries – pitted and sliced

2 ears of corn

Grill asparagus and corn for about 15 mins in the oven at 350 or on the BBQ 

Mix in with cherries

Stir in 2 TBSP of honey ginger balsamic vinegar ( or any flavoured balsamic really) and 1 TBSP Olive oil. A bit of pepper 😜 toss and serve warm.

Fixers

1 green, 1/2 purple . Serving is 1 and 1/2 cups 

A Day of Food

So someone asked me to blog about a typical day of eating on the 21 day fix. For where I am right now, I’m allowed

4 green – veggies, 4 red – protein, 3 purple – fruit, 3 yellow – carbs, 1 blue – good fats, 1 orange – seeds and dressings and 4 Tsp. – nut butters, oils 

I’ll include my exercise and water intake as well… 

So I started my morning at 5:45. Drove over to the woodlot and walked with the dog for 30 minutes. I am doing the PIYO workouts for a change of pace from the 21 day fix workouts, as I’ve been doing them since early January, but my back has been acting funny this week so I’ve just been walking – missing it though so going back to PIYO tomorrow morning 😜

Rock and I enjoyed our walk 😊 

 

Came home and had 8ozs of caffeine free herbal tea – so that counts towards my water – thank god cause I have to get 92 ounces in! That’s hard for me.

I have my shakeology for Breakfast when I get to school. This morning I had a cherry blossom one! Squeal! So friggin good!  

 

So it’s a scoop of chocolate shakeology – 1 red

1 full green on spinach

A purple of frozen cherries

2 tsp. Of peanut powder

1/3 cup of almond milk and 1 and 1/4 cup of water

A tsp of coconut extract 

SO GOOD

I also had 2 TBSP of Apple cider vinegar and my immune system boosting supplement I get through BEachbody . It’s called Cordastra 😜

 

My 10am snack was a blueberry parfait.

1 red of Greek yogurt

1 yellow of steel cut oats 

1 purple of blueberries 

It’s my go to!!!!

Lunch was a layered Mason Jar salad

Layer was a homemade dressing with maple balsamic vinegar and olive oil 

  
A red of leftover honey garlic chicken 

  
A yellow of quinoa 

  
A green of tomatoes, onions and peppers and a green of mixed greens and micro green shoots  

 

SO GOOD – even my students wanted it! 

  
 

I finished a 32 ounce water bottle by 2 and had 3/4 of a purple of strawberries around 3pm. 

By 4 I had downed another 32oz water bottle and prepped supper for 6 which was a Pita pizza

1 yellow for the Pita

1/4 purple for the sauce

1/2 green for onions and peppers

1 blue for the cheese and olives

1 red for the hamburger 

A drizzle of hot sauce 

  
It was very filling

I just drank another 8 oz of water and I’m hoping to get the last 24 oz in before bed…. And yes I do pee all night 😜

What do we eat the most of? 

Since Mike and I began this health journey, our groceries have changed a LOT! In insane the amount my of spinach we go through! I’m talking 3-4 big Costco containers of spinach! Seriously, that’s a freakin lot of spinach! And eggs…. Holy frig! Like 40 a week! No kidding!  

 

Blueberries, strawberries, apples, cucumbers, peppers and carrots are all up there too. Every day I take… What I call, a yogurt parfait..,. I actually do up 4-5 of  these in mason jars, on Sunday’s. They are crazy good and are a great 10am snack.  

 

So for you fixers – 1 purple of fruit, 1 yellow of oatmeal, 1 orange of seeds or my new fav, hemp hearts and 1 red of plain Greek yogurt.., if yA have to, put a splash of maple syrup or honey… Yum! So needless to say, I go through a lot of steel cut oats and hemp hearts and sunflower seeds 😀 

 

Costco had the big bag of steel cut oats and the Manitoba Hemp hearts and I get my sunflower seeds at Real Food Connections here in Fredericton.

Now I don’t have a sweet tooth….most of the time… But about once a month….I do. So I have these homemade peanutbutter cups in my freezer…. Um… The bomb dot com….

  
1/2 cup of coconut oil – melt!!!!! ( my friend didn’t and let’s just say they were UGLY! )

1/2 cup of cocoa powder

1/4 cup of honey

1 TBSP vanilla extract

1/4 cup natural peanutbutter.

Mix 1st 4 ingredients until smooth. Put 1 tsp. In 12 small cupcake tins (I line them with paper cupcake liners) freeze for about 5 minutes then top with a tsp. Peanutbutter and then another tsp of the chocolate mixture. Freeze for another 5 minutes and then put a couple of sea salt flexs on top of each one. 

Fixers these are 3 tsp. Each 🙂 

Amazeballs.

The last 2 things we always have on hand are Ezikel wraps – superstore – health food frozen section – wraps are always our back up plan for lunches  

 

And we have tons of Masonjars on hand! Yard sales are great for these!

21 Day Fix Baked Oatmeal

  

This was amazing!!! We had it for breakfast but it can eaIly be a snack too 🙂 

1 cup of oats

1 cup of steel cut oats

1 cup of nuts – we used Pecans 

1 cup of berries – we used strawberries

1 banana

3/4 cup of maple syrup

2 cups of vanilla unsweetened almond milk

1 tbsp of vanilla

1 egg

Pre heat the oven to 350 F

Mix the 2 kinds of oats, 1/2 of the nuts, strawberries, maple syrup and vanilla. Spread it evenly in a 9×13 pan. Sprinkle the rest of the nuts and top with a sliced up banana. Mix the egg with the almond milk and pour over the oatmeal. Bake for 35 minutes and then serve warm! 

Fixers – 1 yellow, 1 purple and 1 blue 🙂 

Groceries 

I’ve been asked to talk about our grocery shopping. So, like most people, we both get paid biweekly. On payday we also sync our “grocery box” from Real Food Connections”. I blogged about this place last week….can’t say enough about it. Real Foods is da bomb dot com. All locally sourced, our grocery box is what we plan our “grown up” meals around. Here is a list of what we got this week…. It is different with every box…. I love the surprise….

  

 For 145$ we got…

2 onions

1 bag of carrots 

1 bag of spinach

1 bag of mixed greens

1 bag of pea shoots

Bok choy 

2 herb plants – oregano and cilantro

A dozen free range brown eggs 

A loaf of sunflower bread 

A block of sundried tomato herb feta cheese

A pound of ground veal

2 smoked pork chops 

3 free range hormone free chicken drumsticks

A sirloin steak 

2 litres of gagetown Apple cider

3 growlers of hard Apple cider 😜

500mls organic natural peanut butter

A bag of sunflower seeds

A bag of vegan chocolate chips

And Java moose ” mudslide ” chocolate roasted coffee

ALL worth every penny! 

Then Saturday morning we hit up the farmers market! This week we got…

2 amazing ribeye steaks – one of which our lovely 6 month old dog snatched off the cupboard and ate! I was totally pissed!  

 

YA we ate – 1….. Wtf 

We got a ton of rib bones for him for 68 cents 

20$ worth of sirloin steak which we cut so we got 9 steaks out of it! 

  
We got New Brunswick goat cheese that is rolled in pine ash…. Yup…. Pine ash….. And it’s right friggin good!  

 

And was a splurge for 8.50!!!! 

And we got 4 yummy greenhouse grown tomatoes and 12 “bundles” for the kidlets lunches…. These are morsles… In an eggroll wrap…. Italian meatball, donair and taco …. They love them…. And we have a punch card there so our next dozen are free 😜

From there we went to Costco and spent 230$…. Well spent though! 

Mike got puma ankle socks and a pair of 32 waist shorts… He was in a 36 😜 and I got 5 pairs of size medium undies… I was in an extra large… And a pair of white capris… Size 10!!!!!!

From there we went to Home Depot and got 60$ worth of herbs to plant in pots on our deck…. Tons of basil and parsley, Rosemary, cilantro, oregano, thyme, lemongrass and lavender and a hanging basket 🙂 

Then to wheatons and got 19$ worth of kcups 😜 hot chocolate and coffee … 42 of em…,

Then value village…,55$

Cheese grater…. Nice one!!!! 4$

Mike got a pair of size 32 shorts 😜 and a golf shirt 

I got a pair of capris, a shrug and a cool shirt and a Calvin Klien sweatshirt/jacket…. Love it

And a blanket for the car for our dog….
There it is…. Our Saturday morning spending 😜 we were home by noon 😜

Weekend Meals – summer is coming!!

Oh this long weekend is supposed to be a good one!!! I know Mike and I are planning to do lots of yard work and food prepping… when we don’t have the kids we indulge in more fancy meals 🙂 We absolutely love it!!

Here is a recipe that we have loved and wanted to share! More to come over the weekend!!!

Sweet and Spicy Asian Salmon with Blueberry Pineapple Salsa

 

MARINADE

1/4 cup of Braggs Liquid Soy seasoning

1/4 cup rice vinegar

1 TBSP Sesame Oil

2 TBSP Maple Syrup

2 tsp. Chili Sauce

1/4 tsp. ground ginger

1 tsp onion powder

                                                                                       1/4 tsp. black pepper

Mix all up and marinade salmon in it for at least an hour. 1 pound of Salmon fillets.

SALSA

6 oz. blueberries

1 cup of fresh chopped pineapple

1 red pepper – chopped

5 green onions

1 TBSP maple syrup

We wrap the salmon in tinfoil and BBQ it – about 7-10 mins but all depends on the thickness of the fillets.

Plate with salsa on top. We serve it over rice – YUM!!!!

21 Day Fix – 1 red, 1 purple and 1 yellow if you serve it with rice. 2 tsp.
