So I was home yesterday, still recouping from a hospital stay last week….(obstructed bowel, it turned out to be….see I’m totally full of shit….) and I did a little cooking to try and boost my energy. So I want to post the few things I tried cause they were AMAZEBALLS!!!!

Copycat Starbucks Green Tea Smoothie
1 cup of green grapes (don’t use purple cause it ruins the color)
1 cup of spinach
1/2 of a frozen banana
1 cup of cold green tea…or better yet, a friend suggested matcha….um oh ya!
BLend all together and serve over ice!! For you 21 day fixers this is 2 purple and 1 green!!!!
1 cup of finely chopped broccoli
1 cup of cooked quinoa (which is about 1/2 cup uncooked – boiled in 1 cup of water 🙂 – you’re welcome)
1/2 cup mild or medium cheddar (get some good stuff – we get ours at the local farmers market – it does make a difference)
3 eggs
Mixer all up in a bowl and divide amongst 10 muffin tins that are sprayed with coconut oil – yes sprayed, you can get it in spray cans now – for real
Cook at 350 F for about 30 minutes . Voila – they pop right out.
21 day fix containers – FOR 2 – 1/2 a green, 1 yellow, 1/2 blue and 1/2 a red (not even really)
You’ll find the taco seasoning which Seasons a pound of taco meat – I use ground turkey
Taco Salad Dressing is also below
1 red container (3/4 cup) of taco meat
1 green (1 cup) of romaine lettuce
1 green (1 cup) of onions, tomatoes and peppers – put what YOU like
1/2 blue (1/3 cup) of dressing – so 2 tbsp
1/2 blue – (1/3) sliced black olives – 2 Tbsp
1 yellow (1/2 cup) of crushed up blue corn chips
(use whatever corn chip you freakin want, I like the color blue!! lol)
Taco Spice for 1 pound of ground meat
1 TBSP chili powder
1/4 TSP garlic powder
1/4 TSP onion powder
1/4 TSP crushed red pepper flakes
1/4 TSP dried oregano
1/2 TSP paprika
1 1/2 TSP Ground cumin
1 TSP sea salt
1 TSP Ground Black Pepper
Taco Salad Sauce – It is Da Bomb Dot Com
1/2 avocado
1/2 cup of plain greek yogurt
1/2 cup of salsa – you pick the heat 🙂
