Chipotle Pork Quesadillas- Kid approved! 

  

Well my savages are back so we tried a new recipe on them 😜. It’s always a gamble but I win !!!!! It was beautiful outside so we used the BBQ and it crisped this puppies up perfectly! Guess what’s in their lunches today ☺️

Chipotle Pork Quesadillas- makes 6

12 tortillas – we use Ezikel and/or Dempsters Ancient Grain

4-5 pork chops or a pork loin 🙂 either will get soft and pull apart in the slow cooker.

Chipotle seasoning – see below for a great recipe 

1/2 cup vinegar (white or apple cider )

1 cup water

2 cups shredded cheese – we used marble but if it was just Mike and I we would hAve used a spiced Gouda 😜

Put the pork and vinegar, water and spices in a crockpot on low for 8 hours. Shred the meat and place 1/2 cup on a tortilla and top with veggies of your choice and 1/3 cup of cheese. Put the other tortilla on top and grill on both sides for about 4-5 minutes. Done! Serve with salsa and a bit of Greek yogurt.

chipotle seasoning 

1 TBSP Parprika

1/2 TBSP garlic powder

1/2 Tbsp onion powder

1/2 TBSP ground dried thyme

1/2 TSP black pepper

1/2TSP cayenne pepper

1/2 TSP dried basil 

1/2 TsP oregano
