Soooo I’m trying to post a few recipes each day to get caught up with the ones people have been asking for! Of course it’s all about the clean eating and good choices. So here yA go…
This is my replacement for wine when I’m cooking! I slice oranges, lemons and limes and freeze them. In a wine glass I put 2-3 slices of frozen citrus, ice cubes and Perrier! Kay it’s not wine but it’s fancier then plain water 😜
2 cups of unsweetened almond milk
2 medium potatoes, baked with the skin on and chopped
2/3 cup of shredded cheddar cheese
1/2 yellow onion… Chopped and sautéed in 2 tsp of olive oil
1/2 tsp garlic powder
Sea salt and pepper. To taste
Heat over medium high heat with only one of the potatoes, till cheese melts… Not boiling and stir constantly.
Pour into a blender and blend. Return to saucepan and add the remaining potato (diced)
Num Num Num oh and top with chopped green onions!! Oh and some chili pepper!!
1 1/2 yellow ( almond milk and potato )
1 pound ground turkey
1/2 cup breadcrumbs
1/2 cup and 2 tBSP ketchup divided – see my past blog for homemade ketchup.
2 tsp. Worcestershire
1 large sweet potato
Preheat oven to 350 F
Mix up Turkey, bread crumbs, and 1/2 cup ketchup.
Divide into 6 muffin tins
Mix the rest of the ketchup and Worcestershire sauce and pour evenly on top of each cupcake
Bake for 20 min
Peel the sweet potato and boil till soft. Mash with a little almond milk… Or whip with a hand mixer.
When cupcakes are done, plate them and top them with the sweet potato mix …. Really yummy
