4 ingredient granola barsΒ 

  

Just wanted to share this quick recipe! So good and so healthy πŸ™‚ and … Benoit approved ( my son – a granola bar expert )

Take 1 cup of pitted dates and soak them for 10 mins 

throw them in a food processor till they form a stick disgusting paste…. Yup but yummy!

Toss together 1 1/4 cups of rolled oats and 1 cup of nuts…. I used a mixture of nuts and dried cranberries  

 

Melt 1/4 cup of nut butter 

 

I used almond butter and added a splash of homemade vanilla 😜

  
( I got it at a little craft shop in Gagetown, NB ) 

Mix er all up – I tossed in a few vegan chocolate chips

Line a small pan (8×8) with wax paper and press the stickiness into in and chill in the freezer before cutting πŸ™‚ I got 12 bars out of it

Fixers – 1 bar is a yellow substitution

This week in my kitchen πŸ˜œ

this has been my first full week home since vacation started so meal planning got easier and I’m able to try some new things πŸ™‚ I freakin love being in my kitchen. I crank my tunes and could literally be in there for hours …. But it’s 30 degree weather so having my oven and stove on all day wouldn’t go over well lol. 

We got our bi- weekly grocery box on Friday  

 

So planning around it was exciting πŸ™‚ 

We got our menu planned with the kids in mind for wednesday onward 😜

  
The only meal we haven’t planned is Friday but things have changed slightly after finding out actually have the kids on Friday now 😝. So our anniversary meal will be Tuesday and we will do 21 day fix approved Nachoes Friday night as one of the savages will be going to a birthday party and the other 2’may or may not be here for supper lol… Teenagers put friends before family hahaha.

So far, since Sunday, I have made some interesting and yummy new food πŸ™‚ here are some recipes πŸ™‚ 

 

Garlic Scapes

  

Pesto

 

Garlic Scape Pesto

1 pound of garlic scapes ( I got em at the market – 2 pounds for 6$ but I know that Sunshine Miles Farms has tons! Check them out 

Sunshine Miles Farm
1 1/4 cup of grate Parmasean cheese

1 cup of olive oil – use a little more if it doesn’t blend well…

1 TBSP lemon juice

1/2 cup of pine nuts 

Ground pepper to taste 

Blend it up and then I freeze it either in ice cube trays or jam jars.

  
We did a double batch πŸ™‚ 

Fixers 2 TBSP would be 1/3 blue and 1 tsp

Broccoli and Cheese Stuffed Chicken

  

We get our chicken at our local farmers market. 24$ for 4 pounds of boneless, skinless organic free range chicken breasts….. It’s amazing! And our broccoli came from Real Food Connections from our grocery box. Oh, and the garlic powder too 😜.

So …. For these puppies

Take 4 chicken breasts and pound them thin… I put them in a big ziplock bag and pound them with a rolling pin. 

Cover both sides with a sprinkle of each of the following;

Salt

Pepper

Garlic Powder

Parprika

Then take;

1 cup of broccoli

3/4 cup of cheese ( we used marble but any kind will do! ) shredded.

Cover one side of each of the breasts with the broccoli and 1/2 of the cheese. Roll them up and use a toothpick to secure them. Top them with the rest of the cheese and bake for 30 min at 375 😜

Fixers – 1 red, 1/4 green and 1 blue

And the final recipe for this post! 

Vietnamese Turkey Meatballs

  

1 pound of ground turkey

2 cloves of garlic

1/2 a big onion – minced 

1 stalk of lemon grass

3-4 TBSP of cilantro

3 TBSP of fish sauce

1 1/2 tsp of cornstarch

1/2 tsp ground sea salt

1/4 cup of maple sugar. 

Mix up everything in a bowl, except the sugar. Roll the mixture into golf ball sized balls…. It’s wet as hell but it’ll be worth the gross squishy feeling! 

Put them in the fridge for 30 mins to set then take Em out and roll them in the sugar. Bake for 30 min at 400. 

We chopped up a head of broccoli and put it in with the balls. They cooked in the juices… Totes amazeballs lol

21 day fix approved pancakes

  

So this just happened! 

I was craving pancakes to go with our freshly picked strawberries….

   
 

Can’t get fresher than this!!! 

So stumbled upon this recipe and I like it way better than the banana and egg pancakes…. This one has more different tastes to it 

Soooo

  
Mix

1/2 banana 

1 yellow container ( 1/2 cup) of oats

2 eggs

A splash of vanilla

A dash of cinnimon 

A tsp honey

Blend then cook with a tsp of coconut oil

  
They cook quickly so watch em

And it makes a lot! 

  
There is no need for syrup! They are sweet with the strawberries! 

  
2 purple, 1 yellow, 1 red and 2 tsp! 

Really yummy! Enjoy! 

Wraps and pizzasΒ 

sometimes meal planning on the fly is tricky or meal planning AND trying to use up what you already have in your fridge is a challenge. We’ve been committed to meal planning since January in our house and if we fail to plan … We plan to fail 

   

We’ve discovered wraps and pizzas are socfreakin easy and fun to play with! The challenge now is how to top the wow factor each time and they are never the same!!!! All clean eating ingredients, you can always have the envy of everyone at work! And you can give them fancy names too 😜

Anything really but with an interesting rub to spice it up πŸ™‚ I love shopping for new rubs ! Winners is great place to find them or health food sections of grocery store.  Farmers markets or any gourmet food section of stores… Chapters has one, downtown shops 

And Allrecipes.com has tons!!! Mike and I use this app ALL the time!!!!

Mustards have been our go to but there are so many different kinds of mustards!!!! Shop around! Experiment! 

We also make our own bbq sauce and dill pickles for garnish 😜

so sorry for not being present lately! I had all my end of year school “stuff” to attend to and I just finished up a conference on creativity…which, by the way, was AMAZEBALLS! I had a birthday thrown in there too and it feels so good to be home now and settled πŸ™‚ 

 

This was my birthday outfit! felt so good!!!!

 
The last week of school was brutal for staying on track with clean eating and workouts. Pot lucks and dinners and parties…. It was never ending and I have been feeling terrible! It’s amazing that after we train our bodies with good clean food and healthy workouts , our bodies start craving it! I literally felt like there was a brick house in my stomach!!! Since Monday I’ve been getting back on track with my workouts and eating as clean as I can. At the conference I was at, the lunches were pretty healthy but it’s hard to work around the sauces and the dressings and oils added to everything. It was hit and miss but I did my best. I did take my Shakeology for my ride there and packed yogurt with berries, steel cut oats and hemp hearts for a snack. The afternoons they had snacks of cookie and fruit- I stuck to fruit πŸ™‚ Then when iD get home we’d cook a healthy supper πŸ™‚ soooo here’s what we have been eating 

Monday night 

Pesto Chicken Skewers with Sweet and Sour Thai Cucumber Pasta 

  

2 breasts of chicken 

Home made pesto – see recipe below

Cut chicken into cubes 

Marinade in the pesto for about an hour. Put on skewers and BBQ till cooked – approximately 15 min.

Pesto 

  

Throw in a blender and freeze in ice cube trays – way too easy! We do 4-5 batches and it lasts us a long time. 

For the chicken we used 3 cubes πŸ™‚ 

Fixers it’s 1red for the chicken and 1/2 a blue and 2 tsp for the pesto πŸ™‚ 

Salad

3 Tblsp lemon juice

3 Tblsp Olive oil

2 Tblsp white vinegar 

1/4 salt

1/8 dried dill

1/8 tsp garlic powder

1/2 tsp fresh garlic

2 cups of cooked chickpeas

1/4 cup of fresh cilantro

1 1/2 English cucumbers 

1 cup of sweet peppers – we used all three colors

1/4 finely chopped onion

2-3 large carrots

2 Tblsp honey

2 Tblsp rice vinegar

1 Tblsp sesame seeds

1 Tblsp chia seeds

Combine the 1st 9 ingredients with 1/2 a cucumber chopped – the longer you let this marinade the more intense the taste will be 

Spiralize the rest of the cucumber and carrots

Whisk the honey and rice vinegar and pour over salad

Drain chickpeas and cuc…add and toss and top with seeds. Enjoy! 

Fixers 1yellow 1 1/2 green and 1/2 an orange – 2 tsp. 

This serves 3 

Tuesday

 

Spaghetti squash with Italian Porkchops


Roasted Spaghetti Squash

 Put oven to 375 F

Cut squash in half and “gut”

Brush both sides with olive oil and season with salt and pepper 

Place face down on a baking sheet and  roast for 40 min.

Scrape the inside with a fork and it will look like spaghetti! Wicked cool

Italian Porkchops

Heat pan on medium high

Add 2 tsp olive oil

Add 4 boneless Porkchops and sear on each side for 1 min.

Remove from pan. Lower heat to medium

Add 1/4 cup of minced onion and 1 Tblsp of minced garlic. CarmeliZe πŸ™‚ for about a min.

Add 1/4 cup of basil

1/2 cup of quartered cherry tomatoes

1 tsp dried oregano 

Cook for about 2 min.

Add the seared Porkchops and cook for an additional 2 min on each side topping them with the tomato mixture.

Top your spaghetti squash with the Italian Porkchops! Yum!

Fixers – 1 red, 2 green and 1 tsp 

Wednesday 

 Breakfast Frittata 

4 small potatoes chopped with skin on

1/2 onion

2 small sweet peppers

3 large mushrooms 

4 eggs

3 Turkey breakfast sausages 

1/2 cup of cheese – we used herb and garlic feta but anything goes

Parboil your chopped potatoes

Toss them in 2 tsp olive oil with a little salt and pepper and roast at 400 F for 20 min

While they are roasting , chop up your veg and cook your sausages and chop them too.

Top your potatoes with veg And sausage. Whisk eggs together and top the frittata.

Bake for 10 mins at a reduced temp of 350F

Sprinkle shredded cheese on top and bake for an additional 5-7 min till cheese is melted.

Makes 3 servings

Fixers – 1 1/2 yellow, 1 1/2 red, 1 green, 1 blue and 1 tsp.
