Walnut, Pear and Avacado Salad with Marinated Flank Steak

  
We modified this from the ” Oh She Glows” cookbook so of course there is a vegan option 😜 instead of flank steak – substitute for portobello mushroom caps – both are excellent. 

Marinade/dressing 

1/4 cup apple cider vinegar 

3 tbsp of olive oil ( we used garlic infused olive oil )

2 tbsp balsamic vinegar

2 tbsp Apple sauce

1 tbsp maple syrup

1 1/2 tsp Dijon mustard

1 clove garlic 

1/2 tsp sea salt

1/8 tsp fresh ground black pepper – and YES it makes a difference is its freshly ground

Shake that up 

Steak

Slice a half a pound of flank steak – thin slices

Thinly slice 1/2 a red onion

Marinade in 1/2 of the dressing for 30 min then grill till cooked through – it was raining when we made it so we grilled it in the frying pan but bbq is the way to go – 

Walnuts

1/3 cup and for God sakes toast them at 350 for 7-8 min – what a difference in flavor

Assemble

A big handful of spring mix greens

1/2 sliced Avacado

1/2 peeled and sliced pear ( you choice a yummy pear )

1/2 the walnuts 

1/2 the cooked steak

1/2 th left over marinade/dressing!

Total yummo

I keep meaning to post these …. Completely random but yA gotta do these! 

1. Homemade Laundry Soap

  
Mikes mother taught this to me and I’ve been using it ever since ! Less than 7 cents a load!!!

Basically 2 parts Borax

  
And 1 part Laundry Soda

  

And I add some Lavender Essential Oil  

 
So 2 cups of borax and 1 cup of soda – 6-7 drops of essential oil 

I make about 3-4 times this amount and keep it in a container on the washing machine. You only need 2 tablespoons per load 😄
2. Your Own Bacon!!!! So easy 

  
Get some sliced pork belly – super easy to find…. If yA go to a market – ask your fav butcher -!hut superstore always has it. 

We had a friends Dad raise a pig for us last year and had a bunch on our freezer.

Basically all you have to do is lay out the slices in a baking dish. Mix up 2 Tblsp sugar and 1 Tblsp of salt with 2 cups of warm water and a few shakes of liquid smoke – the second time we made it we also added 2 Tblsp of maple syrup. Let the pork belly sit in the brine for a couple of days and then cook it up….. Holy jumpins it’s good!!!!
