Walnut, Pear and Avacado Salad with Marinated Flank Steak

We modified this from the ” Oh She Glows” cookbook so of course there is a vegan option 😜 instead of flank steak – substitute for portobello mushroom caps – both are excellent. 


1/4 cup apple cider vinegar 

3 tbsp of olive oil ( we used garlic infused olive oil )

2 tbsp balsamic vinegar

2 tbsp Apple sauce

1 tbsp maple syrup

1 1/2 tsp Dijon mustard

1 clove garlic 

1/2 tsp sea salt

1/8 tsp fresh ground black pepper – and YES it makes a difference is its freshly ground

Shake that up 


Slice a half a pound of flank steak – thin slices

Thinly slice 1/2 a red onion

Marinade in 1/2 of the dressing for 30 min then grill till cooked through – it was raining when we made it so we grilled it in the frying pan but bbq is the way to go – 


1/3 cup and for God sakes toast them at 350 for 7-8 min – what a difference in flavor


A big handful of spring mix greens

1/2 sliced Avacado

1/2 peeled and sliced pear ( you choice a yummy pear )

1/2 the walnuts 

1/2 the cooked steak

1/2 th left over marinade/dressing!

Total yummo
