Steamed stuffed Zucchini Rounds with New Years Fried Rice


So Mike and I haven’t had very many nights alone over this past year and although we are not complaining – cause we absolutely love every minute with our kids, we were really excited to try some new recipes that the kids wouldn’t necessarily like ( other than Mylaine cause she’s a major foodie ). After eating this we figure the kids would actually like it and the only thing they might not consume would be the zucchini shell. 😜 and even that might get eaten 😜😍

Stuffed Zucchini Rounds 

4 zucchinis – 6-7 inches in length – not too fat around 

1/2 pound lean ground beef 

1/2 cup of teriyaki sauce 

1/2 cup of plain bread crumbs 

1/4 cup of chopped green onions 

Chop the ends of the Zucchinis off. Slice them into 1 inch Rounds. Scoop out the flesh of the Rounds leaving 1/8 inch around the sides and bottom. Put them in a large ziplock and add the teriyaki sauce. Marinade them for 30 mins or so – flipping the bag a few times.

Meanwhile mix the beef, green onions, bread crumbs and then add the reserved marinade once the zucchini Rounds are taken out. 

Fill each marinaded zucchini round With the meat mixture and place them in a steamer ( I used the epicure large square steamer ) make sure the water in the steamer doesn’t touch the zucchini. Place in the oven at 350 for 10 mins and voila! 

New Years Fried Rice 

4 cups of cooked basmati rice 

3 slices of bacon 🥓 chopped 

1/4 cup of frozen peas 

1/3 cup of chopped red pepper

1/3 cup of chopped green onion 

1 egg beaten 

2 Tablespoons of soya sauce 

Cook the bacon in a deep skillet. When crispy, add the red pepper, green onions, and peas.Stirfry for about a minute then add egg and scramble. Add rice and stir fry with thensoya sauce until mixed through. 

Serve hot
