Breakfast Quesadillas 

So we’ve been looking for new breakfast ideas and we saw breakfast burritos (which are awesome FYI) and thought these could work too! 


In a large skillet 🍳 heat up 2 tsp of olive or avacado oil 

Sauté 1/2 chopped onion and a chopped red pepper.(4-5 min)

While it’s cooking – whisk 8 eggs with 1/4 milk and season with 1/4 tsp of salt and pepper – add to the skillet and scramble up 

Add 4 handfuls of spinach ( it looks like a lot but once it’s whilted it’s fine :-)) and 1/2 cup of crumbled feta.

Set aside 

In a clean skillet – spray the pan and lay a tortilla down – put about 1/2 cup on half of the tortilla and sprinkle 1/8 cup of mozzarella cheese on top of that – fold the other half over and press down. In a minute or so flip over to crisp the other side and voila 🙂 so yummy!

Peanut butter Oat bites 


A quick and easy treat to keep handy 🙂 I do these up and keep them in a container in the freezer. Healthy and a great grab for a zap of energy 🙂 

2 cups of oats 

1 mashed banana

1/2 cup of peanut butter 

1/3 cup of honey

1/2 cup of semi sweet chocolate chips

1 tsp vanilla extract

1/2 tsp salt

Mix it all up good and chill for 10-15 min then form into 1 inch balls ( it makes anywheres from 30-40 balls ) It’s very sticky so they don’t have to roll perfectly 🙂 

Place them on a cookie sheet lined with parchment and put the pan in the freezer. Freeze for 30 min or so and then put in a container ( put parchment paper in between layers of them so they don’t stick ) and place back in freezer – take them out as ya “need” them 🙂 

Fantastic Easy Stir Fry Sauce

Ok quick and easy 🙂 


2 TBSP of the sesame Ginger epicure dressing mix 

2 TBSP brags Liquid soy seasoning ( or regular soya sauce – but that’s a lotta sodium)

1/3 cup of avacado oil 

1/3 cup of rice vinegar 

We sliced up 3 chicken breasts for 5 of us. Threw in a bag of stir fry veggies ( precut  and washed ) and served it over brown rice 

Easy, healthy and quick

My daughter asked for this today. We had a big storm so we had a slower morning as we didn’t have school. After having avacado on toast with poached eggs, when we were in Montreal this summer, she wanted that again but with my hollandaise sauce 🙂 amazing FYI


Soooo toast an English muffin ( the Ezekiel ones are great )

Mash an avacado and add a splash of lime juice and a pinch of sea salt. Spread that all over 🙂 

Poach an egg ( soft is best! )

Top with Hollandaise sauce 🙂 here is my recipe that I adapted from the Fixate cookbook

1/4 cup of plain Greek Yogurt 

1 egg yolk

2 TBSP lemon juice 

Stir and cook in a double boiler ( I actually just use a pot fit tightly on top of another pot) for 6-7 min ( until creamy ) and I add a dash of sea salt and fresh ground pepper.

Remove from stove and add 2 TBSP of butter 

Let it sit for 2 mins then drizzle some on your eggs

Best Fajita Marinade!!!

Well this was a bit of a guess but it turned out amazing!!! You HAVE to try this!!!! Best fajita taste ever!!!! 


1/4 cup of chopped cilantro ( we had a tube of the puréed cilantro in the fridge so I just used that )

1/4 cup of olive oil 

1/3 cup of orange juice 

3 TBSP lime juice 

3 cloves of crushed garlic 

1/2 tsp sea salt

1/2 tsp of cumin

1/2 tsp black pepper

1/2 tsp cayenne pepper 

Whisk together and marinade sliced chicken breasts for at least an hour… longer will taste better 

I then laid out the chicken in a pan ( spray it first ) and baked it for 30 minutes 

Save a bit of the marinade to cook the veggies in 

Absolutely – hands down, the best we’ve ever had 

Steamed stuffed Zucchini Rounds with New Years Fried Rice


So Mike and I haven’t had very many nights alone over this past year and although we are not complaining – cause we absolutely love every minute with our kids, we were really excited to try some new recipes that the kids wouldn’t necessarily like ( other than Mylaine cause she’s a major foodie ). After eating this we figure the kids would actually like it and the only thing they might not consume would be the zucchini shell. 😜 and even that might get eaten 😜😍

Stuffed Zucchini Rounds 

4 zucchinis – 6-7 inches in length – not too fat around 

1/2 pound lean ground beef 

1/2 cup of teriyaki sauce 

1/2 cup of plain bread crumbs 

1/4 cup of chopped green onions 

Chop the ends of the Zucchinis off. Slice them into 1 inch Rounds. Scoop out the flesh of the Rounds leaving 1/8 inch around the sides and bottom. Put them in a large ziplock and add the teriyaki sauce. Marinade them for 30 mins or so – flipping the bag a few times.

Meanwhile mix the beef, green onions, bread crumbs and then add the reserved marinade once the zucchini Rounds are taken out. 

Fill each marinaded zucchini round With the meat mixture and place them in a steamer ( I used the epicure large square steamer ) make sure the water in the steamer doesn’t touch the zucchini. Place in the oven at 350 for 10 mins and voila! 

New Years Fried Rice 

4 cups of cooked basmati rice 

3 slices of bacon 🥓 chopped 

1/4 cup of frozen peas 

1/3 cup of chopped red pepper

1/3 cup of chopped green onion 

1 egg beaten 

2 Tablespoons of soya sauce 

Cook the bacon in a deep skillet. When crispy, add the red pepper, green onions, and peas.Stirfry for about a minute then add egg and scramble. Add rice and stir fry with thensoya sauce until mixed through. 

Serve hot

Enjoy!! 

Maple Garlic Ginger Chicken

Ohhhhhh this dish will melt in your mouth!!!! All clean fresh health ingredients makes this a must try!!!! 

Mix together 

1 TBsp maple sugar ( you could use brown sugar if you don’t normally have maple in the house )

2 TBsp maple syrup 

1/4 cup Liquid soy seasoning ( we use Braggs but any soya sauce could do )

2 tsp of fresh ginger minced 

2 crushed cloves of fresh garlic ( we use more cause we love garlic!)

Set aside….

Heat a wok or deep skillet with 2 tsp of oil ( avacado oil is awesome but olive oil is good too ) 

Add and cook 4 chicken breasts sliced into 1/2 inch slices 

Season with salt and pepper and cook for about 6-7 min. Toss. 

Add sauce and 3-4 big handfuls of thin green beans or broccoli – any veg you like really but ones that won’t produce too much water while cooking

Simmer until sauce is less watery – almost thick. 

Serve over rice 🍚
