A Great Breakfast to try! 

My daughter asked for this today. We had a big storm so we had a slower morning as we didn’t have school. After having avacado on toast with poached eggs, when we were in Montreal this summer, she wanted that again but with my hollandaise sauce 🙂 amazing FYI


Soooo toast an English muffin ( the Ezekiel ones are great )

Mash an avacado and add a splash of lime juice and a pinch of sea salt. Spread that all over 🙂 

Poach an egg ( soft is best! )

Top with Hollandaise sauce 🙂 here is my recipe that I adapted from the Fixate cookbook

1/4 cup of plain Greek Yogurt 

1 egg yolk

2 TBSP lemon juice 

Stir and cook in a double boiler ( I actually just use a pot fit tightly on top of another pot) for 6-7 min ( until creamy ) and I add a dash of sea salt and fresh ground pepper.

Remove from stove and add 2 TBSP of butter 

Let it sit for 2 mins then drizzle some on your eggs 
Soooo goooooddddd and good for ya 🙂

Healthy chocolate peanut butter cups

For when you have that crazy urg ya just can’t fight


1/2 cup coconut oil ( got mine at Costco )


1/2 cup cacao powder ( got this online but you could use unsweetened cocoa powder


2-3 TBsp maple syrup ( Briggs is from Moncton ) 


Melt and pour 1 TBsp into each of 12 mini muffin tins – lined with papers 🙂 

Chill in the freezer for 10 min

Top with 1 TBsp of melted natural peanut butter (1/3 cup should be enough)

I got this kind at the Superstore 


Top with another TBsp of the chocolate mixture and sprinkle with a pinch of sea salt 

Chill in freezer and keep cool 🙂

Baked peaches and Pecans

I’m actually not a big dessert lover but when the mood strikes – look out! 

Peaches are cheap right now – I got a big basket of Ontario peaches for 2.97!!! So I needed to figure out something yummy to do with them other than eating them with the juice dripping off my chin- frig I love peaches…

So this got invented!!! OMG yum!!!!!

So this is for two servings which I baked in little mini soufflé dishes ( that I got from the dollar store! )

In each dish slice up a peach…… Yes one in each dish…. Geesh! 

For the topping mix together

1/4 cup of maple sugar

2 TBSP of oat flour

1/3 cup of crushed pecans

1 tsp vanilla extract

divide it on top of each dessert

Bake for 30 min at 350…. It’s that easy peeps
  

Chicken Ceasar Salad

Best ever! Modified a bit from the Fixate Cookbook which is an amazing cookbook that can be used with the 21 day fix portion control program or just for some great clean eating recipes 🙂  

 

It’s the dressing that makes it! 

Dressing

1/2 cup of plain Greek yogurt – I use the 2% Kirkland brAnd – it’s our go to 

3 TBSP lemon juice

1/3 cup Parmesan cheese – shredded

2 cloves of minced garlic

2 anchovies – I get these in a tin in the seafood section of the grocery store – way cheaper than paste and way better.

1/3 cup of olive oil

1/2 tsp black pepper – always better when it’s freshly ground so I eyeball the amount and probably put in more like a full tsp cause I love pepper.

1 shake of sea salt – I never use a ton – just enough to bring out the flavor. 2-3 grinds from a mill if that makes sense 😝

Put’er all in a food processor or blender or magic bullet or whatever the hell yA have and blend baby!!! 

Salad 

It calls for 4 cups of romaine lettuce but that’s a friggin ton of lettuce! Seriously! I go with 2 cups approx. 

3/4 cup of grilled chicken – I just grill in with a dash of salt and pepper

1 slice of whole grain bread cubes and toasted – I use about a 1/2 tsp of olive oil and a dash of pepper and toast them at 400 for about 5-7 min depending on your oven.

  
Add 2 tBSP of dressing – toss and munch!

Optional – 2 tBSP of Parmasean cheese and a tsp of capers. 

  
This will be packed for many school lunches AND

The dressing is good tossed with baked new potatoes !!!! Mmmmmm

Enroute to Cape Breton 

So I’m enroute to Cape Breton for a family wedding and Mike and I didn’t want to eat crap so we packed a cooler …. Yet again! Lol our cooler has got a. Lot of use this year! And man are we ever saving money! For real! 

In our cooler we have our staples….

Boiled eggs

Blueberry , Greek yogurt, steel cut oats and hemp heart parfaits ( my fav.), carrots, cut up melon, lots and lots of water and we made fresh chicken breast wraps with an awesome whole grain mustard and lots of veggies 

Before we got on the road I had to stop in at Aura Foods – a local health food store, to get a few supplements my amazing therapist perscribed me. My back has been giving me a lot of grief lately so I’m stepping up with more proactivity 👍

  
And I found these little gems for the ride to help curb my sweet tooth 😜

  
We stopped in Moncton to add a big bag of spinach, bananas,  and frozen strawberries so that we could make our shakeology while in Cape Breton. That’s a must for us. Of course I stopped and got a new , cheap blender from Walmart…ummm 24.95…. Hello it’s red!!!  

It’s not going to be easy to eat completely clean but I’m going to try my best and we have our workout gear packed with our  DVDs! Wish us luck!

Ok so summer hasn’t been my best friend for keeping up with my blogging. I was so good at it when school was it but it all went ta hell since vacation kicked in. And it’s not like I’ve been layin around doing nothing! I haven’t stopped since school was out! I took on a masters course (#7) on creativity, I took on a fundraiser with Mike (good thing I love him cause it’s been a pain in my ass) and we’ve had family visiting for awhile…still getting ready to head to Cape Breton on Friday and I just wrote a 10 page paper….gahhhh….

Oh and this happened 🙂

 

Keeping up with workouts has been going pretty good and eating clean is always top on my list…but ohhhhhh the wine has been flowing…summer … is ….hard. BUT I haven’t gained any of my weight back and I am determined to reign everything in! I just started a new challenge group for myself doing the new CIZE beachbody program. I LOVE IT!!!!!

I’m a complete nut and love to do this in the privacy of my own home…as you can see why!!!

Kay so here are some recipes ya’ll…cause I know thats why your here lol

  A Taco Turkey Burger with fresh homemade salsa

Salsa 

4 Roma tomatoes – seeds removed and diced

1/2 red onion

1 jalapeño pepper

2 tap minced garlic

1/2 cup cilantro leaves – chopped

1 lime – juiced

Salt & Pepper

Directions- mix it up – duh

Taco Turkey Burger

1 pound of ground turkey

1 Tblsp minced garlic

1/8 cup southwest seasoning – in the 21 day fix book

Seasoning mix

1 Tbsp chili powder

2 tsp. Ground cumin

1 tap coriander

1/2 tsp. Onion powder

1/2 tsp. Garlic powder

1/2 tsp. Dried oregano 

1/2 tsp. Smoked parprika

1 tsp. Sea salt

I make big batches of this as we use it a lot! 
Mix er up and into parties and BBq away!!

Containers are 1 yellow for the bun, 1 red for the meat and 1/4-1/2 of a green for the salsa! 
  
Kay so 21 day fix Nachoes are soooo easy!!!

I take 2 corn tortillas and cut them into triangles with a pizza cutter – toast them in the oven at 350 till toasty 

Top with Turkey meat that’s been seasoned with the Southwest Seasoning 

Then add chopped veggies of your choice and some salsa

I add a little hot sauce 🙂 and a blue container of some cheese – Feta is really good 🙂 

Containers – 1 yellow, 1 red, 1 green and 1 blue

SO there has been a lot of people asking for certain recipes so this post is dedicated to them 🙂 Enjoy!

Turkey Zucchini Muffins

Turkey Zucchini Muffins

 

2 pounds of ground turkey

3 egg whites

1 cup of oats

1/2 tsp. cumin

1/2 tsp thyme

2 tsp. dried yellow mustard

2 tsp black pepper

1 tsp. cayenne pepper – adjust to taste

2 Tbsp of minced garlic – num num num

1 small onion – chopped

1 shredded zucchini

1 shredded carrot

1-2 stalks of celery – chopped

Preheat oven to 375F – Spray 12 muffin tins (I use a coconut oil spray or Olive oil

Mix everything up – divide into the 12 tins and Bake 40 minutes.

2 muffins are 1 red, 1/2 green and 1/2 yellow

Enchilada Soup

1/2 chopped onion

2 minced garlic cloves

3 cups of veggie or chicken broth – low sodium, organic

1 8oz can of tomato sauce – low sodium and organic

1/8 cup of fresh cilantro

1 – 15oz can of black beans – rinsed

                                                                                                      2 cups of frozen corn kernels

                                                                                                                      1 tsp cumin

                                                                                                             1/2 tsp ground oregano

                                                                                                    2 chicken breasts cooked and shredded (I

                                                                                          boil them in water for 10-12 minutes then

                                                                                                                shred and add to this)

Put it all in a crock pot and cook on low, covered for 5 hours….yum!!!

Fixers – 1 red, 1 green and the serving size is 2 FULL GREEN CONTAINERS! – 2 cups!!!

I don’t have pics for these next two but they are dandys!!!

Scallops with Strawberry Salsa

2 handfuls of strawberries – finely chopped

1/2 a medium shallot – or use the white parts of green onions 🙂

2 TBSP of fresh basil – chopped

2 TBSP of arugula – chopped

1 TBSP red wine vinegar – just enough to taste

1/2 pound of medium to large sea scallops

salt and pepper to season

1 TBSP of Coconut oil

Mix the strawberries, shallot, vinegar, arugula and basil with a little salt and pepper for seasoning.

Heat oil over medium heat. Dry the scallops and season with a little salt and pepper. Add scallops to the pan – don’t crowd them. Cook for about 3 minutes on that side and flip. Cook for another minute or 2.

Top each scallop with salsa 🙂 SOOOOO GOOD!!!!

Guesstamating for 5 scallops to be 1 red and 1/2 a purple 🙂

Honey Garlic Chicken Drumsticks

1 TBSP olive oil

10 Chicken drumsticks – skin removed

3/4 cup of honey

3/4 cup BRAGGS liquid soy seasoning

2 crushed garlic cloves

1 TBSP minced ginger

1/4 cup of pineapple juice

Mixer all up and pour over the drumsticks – cook on high in the slow cooker for 4 hours OR on low for 6-7 hours .

Count it as a red 🙂
