Breakfast Quesadillas 

So we’ve been looking for new breakfast ideas and we saw breakfast burritos (which are awesome FYI) and thought these could work too! 


In a large skillet 🍳 heat up 2 tsp of olive or avacado oil 

Sauté 1/2 chopped onion and a chopped red pepper.(4-5 min)

While it’s cooking – whisk 8 eggs with 1/4 milk and season with 1/4 tsp of salt and pepper – add to the skillet and scramble up 

Add 4 handfuls of spinach ( it looks like a lot but once it’s whilted it’s fine :-)) and 1/2 cup of crumbled feta.

Set aside 

In a clean skillet – spray the pan and lay a tortilla down – put about 1/2 cup on half of the tortilla and sprinkle 1/8 cup of mozzarella cheese on top of that – fold the other half over and press down. In a minute or so flip over to crisp the other side and voila 🙂 so yummy!

A Great Breakfast to try! 

My daughter asked for this today. We had a big storm so we had a slower morning as we didn’t have school. After having avacado on toast with poached eggs, when we were in Montreal this summer, she wanted that again but with my hollandaise sauce 🙂 amazing FYI


Soooo toast an English muffin ( the Ezekiel ones are great )

Mash an avacado and add a splash of lime juice and a pinch of sea salt. Spread that all over 🙂 

Poach an egg ( soft is best! )

Top with Hollandaise sauce 🙂 here is my recipe that I adapted from the Fixate cookbook

1/4 cup of plain Greek Yogurt 

1 egg yolk

2 TBSP lemon juice 

Stir and cook in a double boiler ( I actually just use a pot fit tightly on top of another pot) for 6-7 min ( until creamy ) and I add a dash of sea salt and fresh ground pepper.

Remove from stove and add 2 TBSP of butter 

Let it sit for 2 mins then drizzle some on your eggs

Breakfast Sausage Rounds

You’ll never buy them in a store again! And the spice possibilities are endless but here is 1 version. This recipe made 50 sausage rounds ( each about 2 inches in diameter ) so we’ll be freezing them for upcoming weekend breakfasts 🙂 the kids love them and I have to hide them from Mike lol.


2 pounds of ground pork 

Mix together the following spices and then hand mix them well into the pork 


2 tsp. dried ground sage

2 tsp salt

1 tsp ground black pepper

1/4 tsp dried marjoram 

1/8 tsp red pepper flakes

1 TBsp brown sugar 

Pinch of cloves

After mixed well, form into balls and flatten thin in a frying pan. Fry at medium heat until cooked through. Don’t forget to flip them 

The possibilities for spice mixs are endless, just remember – sage and marjoram are key and ya gotta have a little sugar and salt but try different peppercorns, sugars, spices with heat… so fun 🙂 

Breakfast Pizza

So… I tried this for the first time this morning and yup … Blog worthy! And healthy! My life has been a train wreck lately and I need to get back on track so you’ll be seeing a lot more blogging in the next little while 🙂 feedback is always welcomed !! Please!!! 


The standard bacon eggs and toast are a fav in this house but I have to come up with something better! I concocted this gem this morning…. So good! And so many combos can work! 

1 whole wheat pita

Spread with a TBSP of garlic scape pesto ( any pesto will do!) 

Sprinkle a little chopped onion

1 scrambled egg

2 slices of sliced Black Forest ham… I tore it up into little bits. I used ….


A few cherry tomatoes sliced up 

2 TBSP of crumbled feta 
Broil at 400F for about 6-7 min and eat! Yummy!
